OVERVIEW
The Culinary Manager cultivates a culture of authentic hospitality, supports business objectives and growth, and oversees the daily administrative and operational tasks of the resorts culinary program. This individual provides overall culinary planning, direction, evaluation, and control of the food service unit(s), achieving operational and financial goals. Their responsibilities include executing the resorts strategy for the food preparation, safety, sanitation; food service, quality, and inventory control; financial management; and the culinary team member management, development, and training. This role is instrumental in establishing and maintaining an effective and efficient culinary program at the resort.
JOB DUTIES
- Promotes and represents Sun Outdoors and the National Food & Beverage Program in a positive manner.
- Creates a fun, safe, and rewarding work environment for team members and provides an open line of communication with staff.
- Supervises, coaches, and schedules all Back of House F&B team members.
- Oversees the daily administrative and operational tasks of the resorts culinary program, including cooking alongside the team members during service, coordinating food orders, ensuring proper plating and temperature, etc.
- Provides knowledgeable oversight for all food production, including menu-planning, purchasing, cost control, and inventory management of the food service unit(s), achieving operational and financial goals.
- Ensures Back of House program(s) across the resort comply with Suns quality and financial standards, as well as government and Health Department standards.
- Coordinates team member selection and development and ensures team members comply with appropriate policies and procedures.
- Partners with Team Relations on team member counseling and recommendation of termination when appropriate.
- Conducts team member performance reviews and recommends compensation adjustments.
- Manages Back of House planning, budget analysis, and reporting.
- Maintains kitchen and cooking areas; ensures kitchen equipment and food storage areas are clean, sanitary, and organized as required by the Health Department Rules and Regulations.
- Maintains compliance with preparation and maintenance of required records, reports, and paperwork for the culinary department.
- Demonstrates initiative and good judgment in assisting customers, clients, peers, and direct reports.
- Interacts professionally with a diverse group of associates, peers, managers, suppliers, clients, and customers.
- Ensures consistent and fair administration of Sun Outdoors policies and procedures.
- Performs other duties as assigned.
- Remains well versed in all aspects of food service management, creating a track record of success.
REQUIREMENTS
- High School Diploma or GED (Required)
- Bachelor's Degree in Culinary Arts, Hospitality, or Food Service Management (Preferred)
- 5 years of culinary/restaurant/food service management experience with increasing responsibilities
- 6 months experience in P&L management
- 6 months contract-managed service experience
- Innate desire to provide the very best guest experience.
- Mentality of a leader with a willingness to learn and grow.
- Maintains a professional resort image, including cleanliness and appearance standards.
- Ability to use Microsoft Office suite (Word, Excel, Outlook)
